Marinated Kale Salad
Recently had this at a friends house for the first time and just loved it.
You will need
3 Tbsp.Lemon juice
2 Tbsp. Olive oil
1 Tbsp. sugar
1 Tbsp. salt.
1/4 tsp crushed red pepper2
16 Oz. chopped kale greens
2 Cups grape tomatoes
1/2 cup red onion chopped.
Combine and refrigerate for 20 min or up to one hour before serving.
Top with 1 cup shaved Parmesan Cheese
(Do not care for the grated in a box.)
8 slices cooked bacon, crumbled.
Depending on how large the kale leaves are I just use the outside curly part for salad and cook the rest of the leaf.

I am back to salads, My cousin from Long Island just left and when family
is here we always over eat.. I see you are making baby blankets. Thanks for comment about my beautiful blue eyed Dalmation. I miss him so much.
