It's Tuesday, You're gonna love it with Kathe

Well since the weather turned cold soup seems the pick for dinner around her but one night I decided I wanted Shepherd's Pie.

 Make your meatloaf in a skillet.
Cook potatoes and mash them and then add them to the meatloaf just at the end of cooking the meatloaf.
Cover with mashed potatoes, sprinkle grated cheese over it and return to oven to brown.
I used to fix it for our kiddos when they were little just to get them to eat onions and green peppers.
When I diced them up finely they never knew they were getting them.

Ahhh, mothers are like that, yes they are! Mine always boiled a small onion with her potatoes. When I was helping her with Thanksgiving twenty years ago, I fished out that little onion and set it aside before mashing the potatoes. She popped it right back in and said, "You'll miss it if it's not in there." I was appalled to think that I had been eating a mashed up onion along with my potatoes for years and years and never knew it. Ha!

That skillet meal sounds delicious. I will be giving it a try. Beautiful swap, too!
