Last fall I purchased some Lemon Pepper Jelly from a friend of mine.
I had never eaten pepper jelly.
She told me that she wanted to make some more this year but Lemon Pepper plants are so hard to find.
Well, our son grows his own peppers so I asked him to grow some.
Didn't happen, but he went to the farmer's market and found some lemon peppers.
Not many but enough for me to combine with some jalapenos and red peppers to make one batch.
Well I did all that the recipe said, used the pectin, etc. but I did not grind up the peppers but chopped them up.
Not good.
The peppers were too large and all raised to the top of the jars.
Well I sampled the jelly.
It was delicious.
I will just have to skim the peppers off the top.
LOL
My plan is to use this for the holidays.
Poured over a block of creamed cheese and then spread on crackers.
Hum delish.

Looks absolutely lovely!! Just an idea to drain everything through a sieve (or cheesecloth) and just make the clear jelly! I think my recipe calls for the cheese to be warmed 30 seconds in the microwave! I had bought a jar of jelly like that once, but have never tried canning my own. Great idea!
I had the same problem with some orange marmalade I made some years ago. Instead of the orange rind mixing with the jelly it floated to the top too. It looks pretty!! Bet it tastes good too! Thanks for your adventure...Have a grand day! Cathy
Mmmm - pepper jelly, a perfectly wonderful addition to any snack or appy - I've never tried making it myself, though, good for you!!
I just noticed we must use a lot of tuna. There is plenty on the shelf. LOL.

This sounds really good! My daughter-in-law's sister gave jars of pepper jelly as a wedding favor. I loved it!
two generations ago, when my grand dad arrived in Borneo, he didn't eat much chillis. Now, I can't eat without any chillis.
